Berry Baked French Toast



After going blueberry and raspberry picking over the weekend, I wanted a yummy breakfast to enjoy these berries. This berry baked french toast sure hit the spot.

1 C blueberries
1 C raspberries
2 eggs
2 tsp.vanilla
1/2 tsp. cinnamon
Milk, to taste (less than 1 C)
1/2 tsp. nutmeg
1/4 C brown sugar
1/2 loaf of bread (we used honey oat - yum!)

In a small saucepan, combine berries, brown sugar and cinnamon. Cook over medium heat until berries are tender.







Meanwhile, beat eggs, milk, vanilla and nutmeg together.



Soak bread in the egg mixture.





Then, in a greased pan (I might recommend a 9x13 pan), spread the berries across the bottom. Top with soaked bread, and pour any remaining egg mixture over the top.







Bake at 350 for 30ish minutes.



Let stand for 5 minutes before serving.

  2. I made this french toast this morning. Made just a couple of small changes (because I am not capable of following directions). It was delicious! I know it will become a regular weekend beakfast for our family.
