Turkey Burgers with Garlic Spinach Sauce


One thing we love about summer is the chance to use our grill.  We grill lots of brats, burgers, white hot dogs, fajitas, pizza, cherry BBQ chicken and even french fries!  Despite our go-to grill favorites, we occasionally enjoy something new.  Something different than our traditional dinners.


This burger uses a delicious garlic spinach sauce and substitutes toast for the bun.  It's a delicious "lets try something new" way to do a burger.




Turkey Burgers with Garlic Spinach Sauce - Inspired by Pink Parsley


Burgers
4 Turkey burger patties
4 slices of whole wheat french bread
butter, garlic and sea salt, to taste

Spinach Sauce
4 oz. fresh mushrooms
1 T flour or corn starch
3/4 C milk
1 T minced onion
1 garlic clove, minced
2 C fresh/frozen spinach
salt and pepper, as desired
1 tsp. lemon juice
2 T Parmesan cheese

Directions
Begin by cooking the turkey burgers on your grill as you would normally cook a hamburger.  If desired, season with Montreal Chicken/Steak seasoning from McCormic.

Meanwhile, saute the mushrooms along with the garlic in a tiny bit of olive oil {or butter, your choice}, over medium heat.  When the liquid from the mushrooms is evaporated, add in the onions.  If you use fresh, saute them just a little bit along with the mushrooms.


In a measuring cup, mix together the corn starch, salt, pepper and milk.  Stir until well blended.  Add this mixture to the mushrooms, while the skillet sits on a burner turned to low.  


Gradually increase the heat, stirring constantly until the mixture thickens.  Add additional salt/pepper/garlic here as needed to your taste preferences. {Note: If the mixture is too thick, thin out with a little additional milk}


Next, add in the spinach.  We used frozen, but fresh will work too.


Stir the spinach in until wilted.  


While this is taking place, butter up those slices of toast {both sides - no skimping}.  Sprinkle with sea salt and minced garlic.  Then, pop them in your toaster oven, under the broiler, or onto the grill to toast.

Then, remove the sauce from the heat and add the Parmesan cheese and lemon juice to the sauce.  Stir.


Serve by placing the toasted bread on a plate, topping the bread with a turkey burger and pouring the creamy garlic-y spinach mixture over the top.

  3. The spinach sauce is really different - in a delicious way! Meatloaf came to mind - I bet it would be good over top of that too.
