Menu Plan–June 16

Happy Father’s Day to all those dads out there!

We had a chance to celebrate with my dad yesterday and I just have to say – I am so thankful for him & blessed by the man God chose to be my dad.

I had fun looking through old photos to find some fun ones to share with my dad.  See exhibit A above.

Other than celebrating my dad, we had a fun BBQ with people from church on Saturday before it rained. True story: I brought this dish to the potluck which is originally a Pioneer Woman recipe, and another couple brought Pioneer Woman’s Salsa.  It was a fun coincidence.

On to the menu for the week:

Make-Ahead Roasted Vegetable Mac & Cheese {adapted from here}

In case you missed it, our new recipes last week included:

Roasted Vegetable Summer Salad – This is a salad we’ll be making again & again.

  2. I just bought my husband an ice cream maker for Father's Day, so we will be making some homemade vanilla too. Those waffles look delicious!
