Menu Plan–January 2

Welcome 2012!  I had such a fun time last week hosting the countdown to 2012 – and I’m thankful for each of you who participated.  The links are still open, so feel free to add your “best of 2011” recipes until they close later this week.

I just need a few thousand hours now, to browse all the deliciousness on Pinterest… but, I do have some good recipe inspiration to kick off the new year.

Tuesday
Apple Pancakes {new}
Veggie-Stuffed Lasagna, no-knead foccocia bread {freezer}

Wednesday {first day of J-term}
Granola, dried fruit
Soup {possibly hamburger soup, or white bean & chicken soup}, tomato basil bread
Bible Study: Mint Pie, Dark Chocolate Peppermint Truffle Hot Cocoa

Thursday
Granola, dried fruit
Leftovers

Friday
Veggie Omelet
Rigatoni with Stewed Vegetables

Saturday
Honey Whole Wheat Bagels
Roasted Vegetable Enchiladas {new}
