Menu Plan - March 20



First off, I must wish a very happy birthday to my mom!  Hope you enjoy your grown up birthday cake!!  I'm so glad we can celebrate together this year.


This past week was spring break, and we stuck to the menu plan pretty well.

Sunday we enjoyed BBQ Chicken, brown rice with steamed veggies.
We made the leftovers into BBQ Open Faced Sandwiches.  Yum.


Monday morning we tried a new baked oatmeal recipe -- Apple Cranberry.

Monday we made one of our favorite spring dishes -
Ham and Garden Veggie Shells


Tuesday I tried a new recipe for orzo pasta with mushrooms and red peppers. 
It made a feast {we're still eating leftovers!},
but it was tasty.



Wednesday was leftover night!
I enjoyed a Veggie Spread Sandwich.
{made w/o meat, adding spinach}



Thursday for St. Patrick's Day, we made
an Irish Beef Pie {new},



Irish Soda Bread,



and Mint Pie.


Friday morning, we made the leftover
Irish Soda Bread into French Toast.

  
Then, we went to visit my grandparents and were spoiled by their cooking 
{and then by Mom's cooking for dinner!}

Saturday was a whole bunch of leftovers...
not overly exciting, but a nice break from cooking.
One leftover we enjoyed was homemade crescent rolls
with cheese and pepperoni.

Monday

Tuesday

Lunch - Broccoli and Brown Rice Pilaf {new}
D - Crockpot Baked Potato Bar
Dessert - Vanilla Frozen Yogurt with Berries {new}


Wednesday
B - Buttermilk Waffles {new}, fruit
D - Italian Chicken Packets {new}

Thursday
B - 1-Minute Cran-Apple Crisp
D - Baked Pasta {new}

Friday
B - Granola and Yogurt
D - White Bean Italian Pizza

Saturday
B - TBD
D - Parmesan crusted chicken, asparagus
