Menu Plan–March 3

Our recipe highlight for the week was on Saturday night when we had dinner with my family after a synchronized swimming show – we enjoyed Cheese-Crusted Lasagna SoupGet the recipe here

I don’t know if you’ve ever seen synchronized swimming before, but after being a swimmer for more than 10 years, and coaching for 4 years, let’s just say it will forever be a part of who I am.  My sister coaches presently, and her girls did a fantastic job at the show – case in point, this lift. 


No, they are not using the bottom of the pool!! And, yes, she is doing a somersault in mid air.  If I can figure out how to edit a video, I’ll try to share the video of this lift with you this week.   

That aside, we tried a new recipe last week that was really delicious: Mushroom & Kale Stroganoff.  The recipe was light and yet filling.  I’ll post it soon. 

On our menu this week:

Cinnamon Waffles with Apple Topping
Crockpot White Chicken Chili, Oatmeal Soda Bread
Dessert: Mint Fudge Brownies {new}

To do: Slice peppers, thaw chicken

Applesauce Granola with fresh fruit
Chicken with Peppers, Brown Rice, Steamed Broccoli

To do: Thaw sausage links

Veggie Scramble, OJ
Brown Rice Casserole, steamed veggies

To do: Thaw chicken

Soda Bread French Toast, berries
Crockpot Chicken Spinach Soup, Crackers

To do: Dice up veggies for risotto

Applesauce Granola with fresh fruit
Garden Veggie Risotto

To do: Prep veggies for quiche

Orange Cranberry Muffins {freezer}
Chicken Spinach Quiche, sweet potato fries

To do: Make wild rice & French Bread

Mushroom & Wild Rice Soup (lunch)
French Bread Pizza, Steamed Veggies
