As I sit here and write out my menu plan for the week, it’s snowing outside. Again. While I am itching for spring, we sit under more snow, with more to come.
I guess the good news is that my students and I aren’t itching to be outdoors – makes for teaching during the last 5 weeks of the semester much easier.
But, it makes menu planning harder! I am ready to use our grill, but sadly, it’s still under snow piles. Like the rest of our yard.
Our favorite new recipe last week went to our version of the “melt in your mouth” chicken that I’ve seen all over lately. It was quite tasty. We’ll share how we made it healthier next week.
I also enjoyed blueberry rhubarb baked oatmeal. If it’s going to snow, I might as well pretend it’s spring by starting to eat spring foods, right?!
