Last week wrapped up October, and I’m finding that hard to believe. We had easy and seasonal meals last week including an old favorite: French Bread Pizza.
It can’t get easier than that – French bread topped with your favorite toppings & broiled for 5 minutes. That’s it.
We also went for a crockpot dish we fell in love with last year – a delicious chili.
After a long day, there is nothing better than coming home to dinner, ready & waiting. Agreed? What’s better with this chili is that it literally goes together in less than 5 minutes, so it’s easy to get going before I head out for work in the morning.
Friday night after another crockpot meal (this time we opted for Teriyaki Chicken Legs), we headed to see some of my college friends. I brought honey butter popcorn, which is always a fun treat.

Un-Stuffed Pepper Casserole {made ahead}
Dessert: Apple Cinnamon Rice Krispie Treats

To do: In the AM, thaw meat for soup

Leftover Waffles {Freezer}
Roasted Veggie Open-Faced Sandwiches

To do: Thaw sausage
Thursday
Crockpot Granola, dried apples
Roasted Apples, Squash & Sausage {new} or Lazy Sunday Casserole
To do: Thaw chicken, dice bell peppers

Whole Wheat Buttermilk Waffles with Maple Apple Sauté Topping
Sweet & Sour Chicken, Brown Rice
To do: Make granola while the oven is hot

Love the idea of French bread pizzas. I think I've maybe made them once, but it was years ago. That chili looks delicious - love how simple it is.
