Menu Plan - April 4



What a beautiful week it has been!  I hope you've been seeing signs of spring at your place too -- it was perfect for celebrating Easter :)  Yea for new life.

On our menu last week looked something like this....

This week, we have lots of recipes using ham!  We don't often have a ham, and so we pulled out many of our favorites to enjoy this week.  When the week is over, we'll freeze the leftover ham and pull it out again in a few weeks.  I love the freezer :)  


Sunday - EASTER!!  Celebrating His resurrection with our friends
Breakfast - Berry Crumble (new)
Dinner - Easter potatoes, ham, deviled eggs
Dessert - Whole Wheat Carrot Zucchini Cake


Monday
Breakfast - Baked Oatmeal
Dinner - Ham and Asparagus Lasagna,  peas


Tuesday
Breakfast - Leftover Baked Oatmeal
Dinner - Leftovers



Wednesday
Breakfast - Oatmeal with apples


Thursday
Breakfast - Cinnamon Raisin Bread
Dinner - Leftovers
Dessert - Grapefruit Yogurt Cake (new)


Friday
Breakfast - Cinnamon Raisin French Toast
Dinner - Cheesy Zucchini, Red Pepper and Barley Bake (new)


Saturday
Breakfast - Garden Veggie Quiche, OJ
Dinner - Veggie Stir Fry, brown rice

Snacks
Granola Bars (new)

    You have to tell me, though, how you get your calzones to bake without leaking all over the place! I always end up scooping the cheese from the baking sheet, but I know there has to be a better way. :)

  5. The brown rice casserole is going on my Got to Try list :) We have a ton of it, but don't care for it much so I have been worried about how to use it up. Thanks for sharing it.

    And your photos are awesome, OMG, I think I am gaining weight just looking at them!
