Last week we pulled a number of recipes out from our archives – and we were reminded of how great they were. I guess I should look in my archives more often!
The Blueberry Breakfast Cake was awesome – I used plain Greek Yogurt in place of the sour cream, and used frozen blueberries… it was so good, we had it for dessert too. This was a frequent breakfast early in our marriage, but we hadn’t had it in years.
We tossed some Chicken Chili into the crockpot, adding a zucchini and using ground turkey in place of the chicken. It was a huge hit with our family, one we need to make more often.
Don’t let the old photos be a discouragement to trying some of our older recipes, they are still tasty! Especially this Cheesy Ham & Pasta Bake. Yum-o.
This week, we’re trying some new recipes and some older ones again. I start spring semester on Monday, so we’re back into our routine. Monday nights this spring will need to be crockpot or leftover nights since I teach lab until 5:30, so here’s our menu plan for the first week of spring semester:
Sunday
Super Bowl Party: Texas Caviar & Chips, Pepperoni Stuffed Crescent Rolls & Spinach Dip {new}, fruits and veggies and French Bread Pizzas, Blueberry Lemon Oat Bars, Chocolate Chip Cookies {new} and/or Sweet Potato Gingersnaps
To do: Thaw pork, make BBQ sauce
Monday
Crockpot BBQ Pork with Homemade BBQ over Sweet Potatoes, with Steamed Broccoli
Tuesday
Pulled Pork Sandwiches, carrots and peas
To do: Thaw chicken breast, make bread
Wednesday
Monterrey Chicken Sandwiches {new}, pickles and steamed veggies
To do: Thaw ground chicken/turkey & tomato sauce
Thursday
Chicken Parmesan Meatballs & Spaghetti, steamed veggies
Friday
Meatball Sub Casserole {new or new}
Saturday
