Menu Plan–October 16th

This last week was a busy one – lots of meetings at night and processing time for Frog Prince and I.  We enjoyed some easier meals of homemade pizza (dough from the freezer), make-ahead chicken & brown rice bake, crockpot sloppy joes, butternut squash mac & cheese skillet and crockpot garden minestrone soup. 

This week, we’re trying some new recipes – I’m feeling the itch to be creative in the kitchen once again! 

Sunday
Leftover Apple Cider Doughnuts
Lazy Sunday Casserole {new}, crockpot butternut squash
{To Do: Make Honey Oat Bread, pull zucchini out of freezer}

Monday
Pumpkin Oatmeal Smoothie {new}
Zucchini & Cheese Soup {new}, Portobello Broccoli & Red Pepper Melts {new}
Baked Apples
{To Do: Pull chicken sausage out of freezer}

Tuesday
Granola, Apple Honey Tea
Baked Pasta with Chicken Sausage {new}, green beans
Great Pumpkin Cookies

Wednesday
Bagel Omelet Sandwiches
Leftovers
{To do: Pull chicken out of freezer}

Thursday
Granola
Crockpot Chicken Parmesan, whole wheat pasta, pickles
1-minute apple crisp
{To do: Make Pizza Dough}

Friday
Chicken Spinach Quiche
Mushroom & Spinach Calzones

Saturday
Maple Oat Scones
Soup – TBD {maybe this one?}

Snacks
Spiced Country Applesauce

  1. I want to try those Apple Cider Donuts, too. Do you have a donut pan? We had your Olive Garden Breadsticks (again) last week. They're becoming a weekly side dish staple. Love them!

    No doughnut pan here... we just used muffin tins. Mini muffin tins would have been perfect, but muffin tins worked too. We got about 12 "doughnut" holes from that recipe.
