Menu Plan–April 21

Last week’s menu plan was filled with some of our family favorites:

Roasted Vegetable Mac & Cheese. This is downright fantastic – and I love the flavor of roasted vegetables mixed with cheddar cheese.  White cheddar is even better. 

Crockpot Chicken Parmesan. This is the only way my family enjoys chicken parm.  It’s so easy to put together and the chicken is unbelievably tender. 

Cheesy Ham & Potato Bake. We pulled some of our leftover ham out of the freezer and used it in this casserole.  The leftovers are even better. 

After eating all our family favorites last week, we’re going to try some new eats this week.  I like planning to try new meals – keeps things interesting in the kitchen. 

Berry Banana Muffins
Leftover Chicken Fajitas {new}

To do: Thaw chicken

Veggie Scramble
Honey Mustard Chicken Bake {new}, creamy cauliflower rice {new} with zucchini

To do: Soak lentils, cook bacon

Apple Cinnamon Baked Oatmeal
Cheesy Bacon Lentils {new}

To do: Make desserts for Bible Study game night!

Leftover baked oatmeal

Bible Study Game Night: Rice Krispie Bars & Easy Fudge Bars

To do: Thaw sweet potato puree

Honey & Olive Oil Granola
Pumpkin & Ricotta Stuffed Shells {new}, roasted Brussels sprouts

To do: Thaw chicken

Scrambled Eggs & Sweet Potato Hashbrowns {new}
Chicken Stew, steamed green beans

Sweet Potato & Kale Chicken Patties {new} in Whole Wheat Buns, Kale Chips
