Menu Plan–July 14

Whoot!  A whole week at home.  I am so excited.  Vacation was fun, but having Frog Prince travel and a conference directly following it was a lot to do in a short amount of time.  Needless to say, I am really looking forward to a week at home – so I can get some work done. 

This last week I attended a conference focused on undergraduate biology education research.  The conference was invigorating, energizing and gave me lots of ideas for teaching this fall.  Plus, it was so wonderful to see my colleagues in person!  I even got spotted of Twitter:

Our recipe highlight from our busy week went to Chicken & Brown Rice Bake.  We love this dinner, and this past week I ended up making it on Saturday night for Sunday’s dinner.  I’ve been trying to take Sunday’s off from the kitchen, and it’s been so nice. 

We also got our first garden produce this week!  We used the zucchini & summer squash in a yummy chicken sauté. 

This week, we’re aiming to try:

Leftover Zucchini Bread Baked Oatmeal
Mixed Roasted Veggies & Pasta {made on Saturday}

To do: nothing!

Berry Banana Muffins, Fresh Fruit
Zucchini Burgers, Green Beans with Mushrooms {new}

To do: Pick green beans

Bacon, Egg & Tomato Grilled Cheese
Grilled Summer Vegetable Salad {new}, Parmesan Tomatoes {new}, chips & salsa

To do: Thaw Italian Sausage, Make bread

Cinnamon Raisin Bread
Sausage Pizza Kebabs {new}, Kale Chips

To do: Nothing

Cinnamon Raisin French Toast
Sweet Potato & Kale Chicken Patties, Leftover Vegetable Salad

To do: Thaw chicken legs, pick green beans

Granola with berries
Crockpot Beer Chicken Legs {new}, Oven Potatoes, Green Beans

To do: Make fruit & yogurt roll ups

Frozen Fruit & Yogurt Roll Ups {new}
Savory Vegetable Tartlets

To do: Make Sunday’s dinner

Frozen-Yogurt Covered Blueberry Bites {new}
Slow-Roasted Cherry Tomatoes {new} & Cheese
Snickerdoodle Granola Bars {new}

Vanilla Ice Cream with Raspberry Rhubarb Sauce
Raspberry Shortcake
