Menu Plan–July 16th

This weekend was a blast!  I had a conference in my field held here at a local university, and I had a wonderful time catching up with colleagues both local and beyond.  It was the first time in two years that I saw my dissertation advisor, and it was really fun to catch up with her & my other colleagues. 

Much of last week we also spent renovating our bathroom, so it was easy meals for us… ones with lots of leftovers! 

Then, Sunday, we had a surprise 60th birthday party for my dad, who’s birthday is this week!  It was wonderful to see all the people who love and care about my dad come to celebrate – and to enjoy ice cream sundaes and root beer floats on such a hot day.

Upcoming, this week will be fun too!  We have a small group BBQ {timed perfectly after the 100 degree weather departs} and a fun weekend with our friends from graduate school.  We plan to eat:

Monday
Leftover French Toast {and stuffed French toast}
Crockpot Sloppy Joe’s, steamed veggies

Tuesday – Grandma’s 85th Birthday!
Granola & blueberries {I can’t get enough of fresh blueberries right now!!}
BBQ – Brats & Burgers, Buns, Pickles, Pasta & Zucchini, & fresh fruit
Dark Chocolate Chip Zucchini Cake

Wednesday – Dad’s 60th Birthday!
Omelets {ham, bell pepper, mushroom, onion}
Leftovers

Thursday
Granola & blueberries
Smokehouse Maple Chicken Fajitas, green beans

Friday
Granola, Yogurt & Blueberrues
Zucchini Mac & Cheese, veggies
Toasted Marshmallow S’more Bars

Saturday
Berry Baked Oatmeal, fresh fruit, OJ
Crockpot Baked Potato Bar
Oatmeal Chocolate Chip Cookies

Sunday
Cinnamon Oat Pancakes {from a DIY pantry mix}, OJ
BBQ – Burgers, Buns, corn on the cob, mashed potatoes {or garlic mashed potatoes}
