Menu Plan–Sept 16

Menu planning is such a blessing to our family – it ensures that even on busy weeknights we are still eating well.  I’ve found that being intentional about even our snacks helps us make better choices during the week.  Do you find the same thing? 

As we move into the fall, it can become quite easy for me to spend much of Saturday and Sunday in the kitchen preparing good foods for us to eat during the week.  However, sometimes this leaves me burnt out and not ready for a week that is busy!

So, I’m adjusting my schedule a bit so that I only spend time in the kitchen one day of the weekend.  The other, will be a Sabbath rest for me; we’ll do leftovers or meals you can make with little prep so that I can take a bit of a break.  I’m hopeful that God will honor this decision to take a rest and will continue to provide time and energy to do the cooking that I love. 

Sunday
Apple Cinnamon Waffles {new}
Quesadillas with roasted tomato soup {leftover}
Grilling – burgers & potato packets

To Do: Thaw pork roast, slice potatoes & carrots.

Monday
Zucchini, Carrot & Apple Muffins {new}
Sandwiches {turkey, cheese, tomatoes & spinach} on wheat buttermilk bread
Crockpot Maple Apple Pork with potatoes & roasted carrots

To Do: Wash blueberries, dice bell peppers

Tuesday
Granola & Blueberries
Black Beans & Brown Rice with Veggies
Roasted Red Pepper Tortellini Bake, Green Beans

To Do: Make dessert for Bible Study

Wednesday
Apple Cranberry Baked Oatmeal
Sandwiches {turkey, cheese, tomatoes & spinach} on wheat buttermilk bread
Leftovers
Dessert for Bible Study: Apple Bundt Cake {new}

To Do: Dice veggies for soup & mac & cheese

Thursday
Leftovers {either bagels, waffles or baked oatmeal}
Crockpot Minestrone {new}, garlic chicken quesadillas

To Do: nothing!!

Friday
Granola & Blueberries
Roasted Vegetable Mac & Cheese {new}, green beans

To Do: thaw bagels

Saturday
Bagel Sandwiches
Clean out the Fridge
Stuffed-Crust Pizza, perhaps?

To do: make snacks for the week

Snacks
Popcorn
Yogurt & Berry Sauce
Pretzels & Roasted Red Pepper Dip
Raspberry Fro-Yo

I set yearly goals plus every year I challenge myself to do something I've never done before so you'd think I'd have this menu planning thing down, but no...I have never done a weekly menu plan (and I'm a homemade, everything from scratch kinda gal). I really like your to do list--breaking things down is the best way to reach those goals--I think you've inspired me to make menu planning the "something I've never done before" goal for 2012. Thank you and I hope you enjoyed your day of rest!
