Menu Plan–December 11

Although this week will be busy, I can’t imagine it will be crazier than last… I was very thankful for our crockpot dinners last week!  We enjoyed lots of soups and simple casseroles that go together in minutes.  Oh, and cookies too from our Bible study Christmas party!

The end of the semester is always bittersweet – I’m thankful for the end of a busy fall, excited to see how much my students have grown, learned & changed, blessed by all that God has done in their lives & mine, and yet sad to see them move on.  Oh, and there’s a little thing called grading.  Yep, I’ll be doing lots of that this week. 

Sunday {Christmas at Grandma & Grandpa’s}
Overnight Cinnamon Sugar Coffee Cake, raspberries
Christmas Potluck – I’m bringing Food Revolution Mac & Cheese (crockpot)

Monday
Berry Baked Oatmeal {carryover from last week}
Calzones, steamed veggies

Tuesday
Leftover baked oatmeal
Faculty Get-Together: Crockpot Italian Sausage Vegetable Soup, Baked Potato Soup, No-Knead Focaccia Bread, Olive Garden Bread Sticks, & Christmas goodies!

Wednesday
Chicken Spinach Quiche
Spaghetti with crockpot sauce, whole wheat, steamed veggies

Thursday
Granola, dried fruit
Crockpot Scalloped Potatoes & Ham, green beans

Friday
Kris Kringle Pancakes, Apple-y Topping
Leftovers

Saturday

TBD
BBQ Turkey Veggie-Stuffed Meatloaf, corn
