Menu Plan–July 22

What a great week!  We started things off with a surprise 60th birthday party for my dad, and then the fun just kept on coming.

Tuesday, we had our small group over for a BBQ!  It was a blast, and we got a great night to sit out on the deck too {read: a break from the really HOT weather}.

Then, this weekend, we had a chance to catch up with some friends from grad school, and that has been a real treat. 

During our week, we enjoyed eating:

This coming week, the fun continues… we celebrate our 5th wedding anniversary on Saturday.  One thing we always look forward to on our anniversary is re-creating our wedding dinner!  That will round out this week’s menu:

Sunday
Cinnamon Oat Pancakes {from a DIY pantry mix}, & fresh fruit
BBQ – Burgers, Buns, corn on the cob, mashed potatoes {or garlic mashed potatoes}S’mores

Monday
Omelets {veggie filled}, bacon
Rigatoni with Stewed Veggies

Tuesday
Berry Baked Oatmeal
Smokehouse Maple Chicken Fajitas, grilled zucchini

Wednesday
Granola & Blueberries {I can’t get enough of this breakfast!!}
Roasted Garden Veggie Lasagna

Thursday
Maple-Apple Sausage in Raspberry Pancakes {new}
Leftovers

Friday
Sweet Cherry Zucchini Muffins
Turkey Burgers on the grill, grilled potato fries

Saturday – Our 5th Anniversary!!
Blueberry Cinnamon Rolls
Recreating our wedding dinner: Chicken Alfredo, Salad, Garlic Bread Sticks and Wedding Cake!

  2. i tried the zucchini mac n' cheese for the first time this weekend and it was delicious! i tweaked it a little by skipping the baking step and blanching the shredded zucchini with the pasta for a minute at the tail end of the pasta cooking time, but it worked fabulously and it was creamy and wonderful. great sauce! the bonus: my better half doesn't like mac n' cheese, so i got to eat it all myself over a few days. sounds like a good deal to me!
