Menu Plan–September 24

Happy Fall!  The days are getting shorter and the trees are changing color… and I’m loving it.    I’m all about apples & pumpkin sweet potato in this house. 

We started off the chilly weekend with a trip to the farmers market, followed by 5+ hours in the kitchen to prepare 56 C of produce (tomatoes & bell peppers) for our freezer.  We are now well stocked.

Overnight Oatmeal Waffles, applesauce
Leftovers {soup & bread}, Applesauce
Leftovers {pasta dish from last week}

To Do: nothing; day of rest!  {pull out chicken legs from freezer} 

Monday
Breakfast Sandwich, fruit
Leftover soup {freezer}
Crockpot Chicken Legs with Wild & Brown Rice, steamed broccoli
Apple Crisp

To Do: Roast tomatoes, prepare black beans, thaw Italian sausages

Tuesday
Granola & Blueberries
Broccoli & black beans with leftover rice, chicken & roasted tomatoes
Lazy Sunday Casserole {new}, green beans

To Do: Bake apple cinnamon baked oatmeal for breakfast on Wednesday

Wednesday
Apple Cinnamon Baked Oatmeal
Broccoli and Rice leftovers
Leftovers, Spiced Country Applesauce

To Do: Prepare veggies for soup, thaw a loaf of bread

Thursday
Granola & Dried Cherries
Leftovers
Cheesy Vegetable Soup with Open-Face Roasted Veggie Sandwiches

To Do: Thaw meat for BBQ

Friday
Scramble Melt, fruit
Leftover soup & whole wheat crackers
BBQ!  {burgers, pickles, potato packets, etc}

Saturday
Chicken & Spinach Quiche
Leftovers
Chicken Mushroom & Brown Rice Bake
Crockpot Apple Cake

To Do:  Make and freeze cinnamon oatmeal pancakes for breakfast for the week, make apple cinnamon oatmeal bread, make Spiced Country Applesauce, & my sister’s 25th Birthday Cake!!!

Snacks
Zucchini, Carrot & Apple Muffins {freezer}
Spiced Country Applesauce
Apple Chips – use dehydrator
Apple Cinnamon Rice Krispie Treats
Yogurt

  1. We're making English Muffins breakfast sandwiches this week too! I'm so glad to see you have a recipe for DIY English Muffins...I just bought some from the store and paid a lot for them, and was curious if they would be easy to do myself. Looks like they are!
