Menu Plan–March 25

Last week I was on spring break & I really enjoyed the time off.  My mom came to visit and we did some spring cleaning.  I did plenty of grading and paper writing, but also had some nice R&R time too.  The weather has been STUNNING – and Frog Prince and I had a chance to go walking at a new-to-us nature center to see the sights & sounds of spring. 

Thursday, Friday and Saturday brought basketball and although our two teams are now out of the NCAA tournament (MSU & Syracuse), we had fun enjoying a new pizza dip during their games. 

In addition, we ate:

All that said, I’m ready to get back to working with my students.  I really love what I do and feel blessed to have the opportunity to work with young men and women of God!  On our menu this week:

Cherry Vanilla Baked Oatmeal {new}
Crockpot Chicken Chili, Wheat Oat Soda Bread {new}

Monday
Oatmeal with Apples
Loaded Baked Potato Soup {crockpot}

Tuesday
Egg Sandwiches
Cheesy Green Beans and Rice {make in rice cooker}

Wednesday
Wheat Buttermilk Blueberry Pancakes
Leftovers
Dessert for Bible Study: Apple Pie & Sweet Potato Pie w/ Gingersnap Crust

Thursday
Granola and Yogurt
Broccoli Beef {new}, Brown Rice

Friday
Leftover Pancakes
Mozzarella and Mushroom Chicken, Brown Rice & Steamed Veggies

Saturday
Blueberry Cinnamon Rolls
Grilled Pizza

  2. Syracuse?! It's not often I stumble across an SU fan...I grew up in that area and am a loyal fan. Not only do I love a lot of your recipes, but you (or your husband) are/is an SU fan...it just gets better and better. :)

    1. Yes, we are SU fans! My husband grew up in Upstate NY and watched Syracuse for years. We went to grad school at MSU, so we now cheer for the Green & White along with the Orange. It's always fun to meet another Syracuse Orange fan!

  3. Judging by the soups on your menu, I'm guessing your weather is a little like ours this week...a far cry from last week! :) Love your new photo update on your blog - all those foods look like yummy spring/summer eats! :)
