What a week. We're back from celebrating Christmas with Frog Prince's family, and we had a wonderful time. We hope all of you had a great time celebrating the birth of our Savior.
My Mother-in-Law and I did some yummy baking/cooking in her kitchen, and I can't wait to post some gluten-free recipes in the next couple of weeks. Most of our meals while gone for the holiday were meat and potatoes -- a real change from what we typically eat at home. But, along with the meat and potatoes, we also enjoyed:

This week, we're trying to clean out the freezer a bit, and make some make-ahead meals so that we're able to be ready for the start of a new semester just after the new year. We're back to work through Wednesday before Frog Prince has more time off at the end of the week. Frog Prince has a major deadline on Tuesday evening, and I hope to get one more paper finished up before the New Year; thus, Monday and Tuesday meals are going to be easy to prepare to help us finish these projects.
We will be ringing in the New Year with some of our all-time favorite treats (see menu for Thursday/Friday):

Breakfast - Apple Cranberry Granola, bananas
Lunch - Sandwiches in the car...
Dinner - Turkey Noodle Soup (from freezer), crackers
Dessert - Dark Chocolate Cherry Bark
Monday
Breakfast - Kris Kringle Pancakes (from freezer)
Lunch - leftover soup and sandwiches
Dinner - Rice Cooker Mac and Cheese, broccoli
Dessert - Baked Apples
Tuesday
Breakfast - Granola, dried fruit
Lunch - Grilled cheese, cooked carrots
Dinner - Crockpot Soup (from my new cookbook!)
Wednesday
Breakfast - Cinnamon Zucchini Muffins (freeze extras)
Lunch - Leftovers
Dinner - Chili, Tomato Basil Bread
Thursday (New Years Eve)
Breakfast - Sweet Potato Waffles, apple-y syrup
Earlier Dinner - Pizza and fruit salad
Evening Snacks - Taco Dip, cheese, crackers, & summer sausage
Friday (2010!!!!)
Breakfast - Garden Veggie Quiche, Blueberry Muffins
Lunch - left over pizza
Dinner - Stir Fry, brown rice and pineapple
Dessert - Cheesecake (new)
Saturday
Breakfast - Leftover Garden Veggie Quiche and Blueberry Muffins
Lunch - Grilled cheese, salad with fresh veggies,
Dinner - Crockpot Chicken and Roasted Veggies, fruit salad

I'd love a recipe for Christmas eggs. I was looking for a casserole type dish I can prep the night before and just pop into the oven while we open presents.
