Menu Plan - March 6



Frog Prince was gone last week, so my sister and I enjoyed simple, easy meals together while he was away.

Before he left on Monday, we had veggie-stuffed omelets for brunch with gingerbread waffles topped with applesauce.


Sunday night, we enjoyed a new recipe for Island Chicken.  It was tasty and delicious.


And, for a special treat, we made a cherry cake with cream cheese frosting.  Frog Prince gave his stamp of approval.


Monday, I enjoyed homemade granola with dried cherries for breakfast.  I just love this simple, brown sugar granola.


Monday night was leftovers before I shuttled Frog Prince to the airport.  Nothing special, but we did enjoy having dinner together.

Tuesday, my sister and I ate one of our favorite dinners -- Penne with Spinach and Chicken served with quick stove top spaghetti sauce.


Wednesday night, my sister made us whole wheat tortillas, which we topped with black beans and sauteed mushrooms and peppers.  Yummy.


Thursday was a long day.  I went to campus at 7:30 and came home at 6:30.  Thus, dinner was another quesadilla.  I was thankful for leftovers.

Friday night we used some of our homemade turkey stock to make a turkey and barley soup modified from this chicken and barley soup recipe.


We began Saturday with waffles of insane greatness - have I mentioned I love these?!?


Dinner was a simple veggie rice -- and it was a nice easy meal for after church.


The new recipes we tried this week will make an appearance here in about a week.  I can't wait to share them with you.

This week is going to be exciting and busy - as it's the last week before spring break for myself and my students.  The best part of the week?  Our friends our visiting from Michigan! I have a few posts in mind for the week, but I'll likely be spending all my free time with our friends.  To give us more time together, our meals will be easy, crockpot or make-ahead dishes.

Brunch - Ham and Pepper Omelets, leftover waffles
D - Grilled Cheese and leftover soup
{To do: Make honey oat bread, yogurt, cookie dough, and roasted veggie spread}


Monday {Kim and Matt arrive!}
B - Granola and Yogurt {new}

Dessert - Crockpot Apple Cake


Tuesday
B - Buttermilk Pancakes, Strawberry Sauce
D - Cheesy Spinach Lasagna Soup  {made in crockpot}, Bread


Wednesday
B - Berry Baked Oatmeal
D - Crockpot Ziti, No-Knead Fococcia Bread
Dessert {for Life Group} - Chocolate Cranberry Bites {new}


Thursday
B - Cinnamon Oatmeal Muffins
D - Crockpot Cherry BBQ Chicken Legs, Pan Fries, Mixed Veggies
Dessert - Frozen Yogurt {new}

Friday
B - Granola and Yogurt
D - Cheesy Green Bean Skillet {made in rice cooker}


Saturday
B - TBD
D - Chicken and Mushroom Ragu {new}
{To Make: Cranberry Oat Yeast Bread}

  4. wow...your pictures of your meals are edible. you make everything look so delicious. not that it's not, but it definitely looks it! enjoy the simplicity of your slow cooker:)
