Menu Plan–August 14

Here’s what we ate last week {it contained a lot of zucchini}:

Maple Sausage & Zucchini Pie

BBQ – Beer Brats, 40-minute whole wheat brat buns, pickles

We are mid-way through August, and that means it’s time to transition back to teaching.  Our menu plan becomes even more essential during the academic year, so I’m now planning three meals a day, plus giving myself notes of what I need to do in order to be ready for the next day.  Here’s our plan: 

Sunday
Granola & Smoothies
At the FAIR!

Monday
Cherry Blueberry Breakfast Cake
Wraps, dried fruit, pickles
Cherry BBQ  Zucchini Boats, broccoli
{To Do: Make extra broccoli & rice for lunch tomorrow, pull chicken out of freezer, make bread}

Tuesday
Granola with blueberries
Broccoli, Black Beans and Rice with diced chicken {reserve a few black beans for Wed}
Crockpot Philly Chicken Steaks, Italian Herb Rolls, carrots
{To do: Slice/dice all the peppers; save for Wed dinner}

Wednesday
Chocolate Raspberry Smoothie {new}
Zucchini, Carrot and Black Bean Quesadillas, blueberries
Mixed Roasted Veggies & Pasta, peas

Thursday
Granola with blueberries
Simple Chicken Sandwich, dried fruit,
Burgers, grilled russet potatoes {new} & baked zucchini sticks {new}
{To do: Thaw Italian Sausages}

Friday
Veggie Omelets
Leftovers
Lazy Sunday Casserole {new}

Saturday
Cornmeal Pancakes {new} with Berry Sauce
Chicken Broccoli Skillet Pasta “Salad” {new}
Leftovers

Snacks & Desserts
Granola Bars {new}
Chocolate Chip Zucchini Cake

    @ Christina -- I teach college students about biology; from the organism (plants & animals) up to ecology. I would call myself an ecosystem ecologist :)
