Menu Plan - April 3

Last week, we had planned for some dinner dishes that just never materialized.  I was on campus later than anticipated several days this week, and our leftovers lasted us longer than we expected - so we didn't get to the chicken dishes we had on our menu last week.

Friday night, our fridge was pretty empty and I got home 2 hours later than I planned.  Enter the challenge of trying to find a quick and yummy dinner.  I pulled out frozen cooked chicken sausages from the freezer, added some mushrooms and broccoli, and served it over pasta with white cheddar cheese.  Sometimes those quick simple meals are life savers.  We also enjoyed:

Pizza Pockets

Cranberry Sweet Potato Muffins

Spinach Pasta Bake

Copy Cat Olive Garden Breadsticks

{don't be fooled by the name, these are the best cinnamon oatmeal pancakes;
perfect for any time of the year!}

{with mushrooms and bacon}

Simple Fudge Bars

By far, the hit dinner of the week was the spinach pasta bake and the olive garden bread sticks... wow!  We gladly ate that for dinner... 3 nights in a row ;)

What are your go-to meals when plans change and you need dinner "now"!?

  1. I just found you on the Ultimate Blog Party and now following you. I'm an associate professor of marketing and have a cooking blog that I'd love for you to stop by and possibly follow if you like. Have a great day!

  2. I can see why you'd want to eat your spinach pasta bake and Olive Garden breadsticks three nights in a row...they look fabulous!

  3. When we need dinner "now" we usually opt for Breakfast for Dinner or Frozen Ravioli with some jarred sauce -- not the best thing for you, I'm sure, but I try to pair it with a salad or veggies to help :)

  4. Sno- this menu looks wonderful! I can't wait to try some of your new recipes. :) Have a great week!

  5. As always your menu and pictures look great! The sweet potato muffins sound really good.

  6. Looks like a great week. Hope you get the chance to try the chicken and dumplings another week. :)

  7. YUM!!! What a great week!! Love that you include things you can do each night to make cooking the next day easier :-)

  8. Hi Sno White,
    Your menu for the week looks great. We would love those Pizza Pockets. Thank you for sharing and have a great week!

Thanks for stopping by! I'd love to hear from you; especially how you're finding JOY in your kitchen.
