Menu Plan - April 3




Last week, we had planned for some dinner dishes that just never materialized.  I was on campus later than anticipated several days this week, and our leftovers lasted us longer than we expected - so we didn't get to the chicken dishes we had on our menu last week.   

Friday night, our fridge was pretty empty and I got home 2 hours later than I planned.  Enter the challenge of trying to find a quick and yummy dinner.  I pulled out frozen cooked chicken sausages from the freezer, added some mushrooms and broccoli, and served it over pasta with white cheddar cheese.  Sometimes those quick simple meals are life savers.  We also enjoyed:  




Pizza Pockets

Copy Cat Olive Garden Breadsticks

{don't be fooled by the name, these are the best cinnamon oatmeal pancakes;

By far, the hit dinner of the week was the spinach pasta bake and the olive garden bread sticks... wow!  We gladly ate that for dinner... 3 nights in a row ;)

Sunday
B - Spinach, Mushroom and Cheese Omelets
L - Buttermilk Bread {new} white cheddar grilled cheese, leftover soup
D - Dinner with family - TBD
Dessert - Fruit Parfait

Monday
B - Buttermilk Waffles {freezer}
D - Italian Pork Chops, Crockpot Baked Potatoes, steamed cabbage
{To Do: Thaw Italian Sausage}


Tuesday
B - Cherry Granola {minus nuts; new}
D - Penne with Broccoli and Sausage

Wednesday
B - Veggie Scramble
D - Cheesy Green Bean Skillet - make in rice cooker
Dessert - Apple Pizza {new}


Thursday
B - Cherry Granola {minus nuts; new}
D - Leftovers

Friday
B - Blueberry Muffins
D - Pizza Margarita, spinach salad


Saturday
B - Cinnamon Roll Toast, sliced strawberries
D - Baked Vegetable Sandwiches, Sweet Potato Fries

  3. When we need dinner "now" we usually opt for Breakfast for Dinner or Frozen Ravioli with some jarred sauce -- not the best thing for you, I'm sure, but I try to pair it with a salad or veggies to help :)
