Menu Plan–Sept. 11

We did pretty well at sticking to our menu plan last week, with the exception of  Monday and Tuesday night… Frog Prince decided to share his lovely cold with me and soup sounded fantastic.  It was roasted veggie minestrone with carrot bread for me! 

Along with the soup, we enjoyed 4 BBQs this past week!  Two were with our own family, and two with school functions.  It was a real treat to enjoy some beautiful weather and great grillin!  And, it was a nice break from cooking for every meal. 

BBQ – Beer Brats, pickles, potato packets, crockpot baked beans
{we also BBQed Black Bean Burgers, Turkey burgers on Saturday night}

Pizza Pockets
{filled with spinach, mushrooms and beef w/ red sauce}

Homemade Dark Chocolate {and slightly healthy but still amazing} Brownies

Chicken Spinach Quiche
{Used this basic recipe, but used ham rather than chicken}

The highlight of our week was yesterday –
my mom and I processed our first crop of apples!!

Paula Reds are in season right now, and they make a wonderful apple pie and apple sauce.  Oh. So. Good.  Check out our facebook page for photos of our baking day!

Tuesday {Crockpot Day!}

Crockpot Italian Sausage and Veggie Soup, bread

Wednesday {Bible Study!}
Granola with applesauce
Penne with Spinach and Chicken
Dessert – Apple Pie {new}

Buttermilk Waffles {from freezer}, Berry Sauce
Roasted Red Pepper Italian Parmesan Pasta Salad {new}

Sweet Potato Risotto, peas
Apple Pockets


Apple Chips
