Menu Plan–October 2

Part of making cooking from scratch work for our family is planning a menu each week.  We plan meals based on (1) our time schedule, (2) what’s on sale each week, and (3) what we have on hand that needs to be used.  These three simple guidelines help us so much in planning what we’ll eat each week. 

Last week, I made our favorite roasted garden veggie lasagna on Sunday night.  For just Frog Prince and I, that dish lasts us nearly all week for leftovers. 

And, with how busy this past week ended up being – it was a welcomed gift to have a few dinners off from cooking! 

We also ended up eating:

Crustless Apple Pie Olive Garden Bread Sticks
Baked Vegetable Sandwiches Garlic Balsamic Crusted Chicken & Wildrice Pepper Salad {new}
Granola Wheat Buttermilk Bread Grilled Cheese
The best potato fries Pumpkin Brownies {new}

This week is a short week at school because we have Fall Break!  Frog Prince and I are looking forward to having Friday off together and hope to check out some fall foliage!

Veggie Omelets
Apple Picking! {Picnic}
Rigatoni with Stewed Veggies
Birthday Cupcakes {for my sister} – vanilla with dark chocolate frosting

Berry Baked Oatmeal
Unstuffed Pepper Skillet, peas

Pumpkin Muffins
Potato Soup, Cheesy Biscuits
{To Do: Make Apple Cinnamon Rice Krispie Treats}

Wednesday {Crockpot}
Granola with applesauce
Crockpot Pulled Pork Sandwiches with homemade cherry BBQ sauce
Bible Study Game Night: Popcorn, fresh apples & caramel sauce {new}

Leftover Zucchini Waffles {freezer}
Leftovers – or baked potatoes with leftover pulled pork
Pumpkin Spice Ice Cream {new}

Cinnamon Oatmeal Pancakes with Apples
Roasted Tomato Sauce {new} with mushrooms & linguine

Apple Cider Doughnuts {new}
Burgers on the grill, dill pickles, sweet potato fries

Apple Chips
