Menu Plan–August 5

Really, August?!  You’re here already?  I must admit, I’m ready for fall – foods, flavors and weather; but, really – where did the summer go?  Next week I start back to teaching doing professional development for new faculty… so, I guess that means I have one true week left of summer.  I hope my garden thinks it’s summer long beyond next week. 

Last week we had a garage sale & finished some renovations in our master bathroom.  It was a great time had by all – and we were thankful for a little extra cash made too.  During our busy week, we relied heavily on our crockpot & enjoyed:

Upcoming this week, we’re eating from the garden – lots of zucchini-based recipes, fresh pickles using our cucumbers (both dill & sweet), spaghetti sauce, green & wax beans and eggplant!

Sloppy Joes, Whole Wheat Buns, Green Beans, Zucchini Sauté

Ratatouille {using our garden eggplant & zucchini!}, Brown Rice

Tuesday {Baking & Cooking Day with my friend!}
Leftover Raspberry Pancakes with Apple Maple Sausages {freezer}
Broccoli, Black Beans & Rice
Crockpot Garden Spaghetti Sauce, Whole Wheat Pasta, Olive Garden Bread Sticks

Wednesday
Wheat Buttermilk Blueberry Pancakes
Leftovers
Tuscan Lemon Chicken, Red Potatoes {new}, Green Beans
Bible study dessert: Chocolate Chip Zucchini Cake

Thursday
Olive Oil & Honey Granola with Berry Smoothies
Leftovers
Zucchini Burgers, Whole Wheat Buns, Green Beans & Roasted Tomatoes

Friday
Scramble Melts on Wheat Oatmeal Bread, berries
Leftovers
Grilled Pizza {using garden veggies – based on this yummy pizza}

Saturday
Honey Wheat Bagels with Blueberry Cherry Preserve
