Menu Plan–August 12

We’ve had some spectacular weather of late – a much needed reprieve from the 40+ days we spent above 80!  In fact, it’s incredible that 75 degrees feels chilly!  Ahhh… fall.  It’s coming.  That means apples, pies, sauce, pumpkin and so much more.  But, before I get too excited about fall, we’re still enjoying summer eats:

Zucchini, Ham, Eggs, and Cheese

This week is back to work for me.  I co-lead professional development for new faculty members at the university where I teach, so even though the students don’t come back for two weeks, we’re gearing up for the start of the academic year.  This means, back to menu planning for the school year schedule. 

To help me in planning – I’ve included not only the menu but also my “To Do” to make this menu function.

Sunday
Leftover Garden Veggie Quiche
Burgers, corn on the cob, green beans, pickles & fresh fruit
Zucchini Maple Sausage Pie, steamed veggies

To Do: Make granola, granola bars, brown rice, sweet potatoes, crackers & veggie dip, raspberry froyo, cookies (perhaps these?) or zucchini brownies {here}, crockpot spaghetti sauce

Monday
Granola & blueberries
Broccoli & Brown Rice Salad with Black Beans & Sweet Potatoes
Wild Rice Brats, Grilled Veggies

To do: Grill or roast veggies for the soup

Tuesday
Omelets, fresh fruit
Leftovers
Roasted Vegetable Minestrone, Olive Garden Bread Sticks {freezer}

To do: Shred zucchini, mix together dry ingredients for baked oatmeal, take bread out of the freezer to thaw.

Wednesday
Zucchini Bread Baked Oatmeal
BLTs {new}
Leftovers + Zucchini Parmesan Strips {new}

To do: Thaw chicken, dice bell peppers, zucchini & mushrooms (dice extra for breakfast)

Thursday
Granola & blueberries
Broccoli & Brown Rice Salad with Black Beans & Sweet Potatoes {leftover}
Grilled Garlic-Crusted Balsamic Chicken & Wild Rice Zucchini Pepper Salad

Friday
Veggie Scramble
Turkey & Veggie Sandwiches, green beans, baked tomatoes {new}
Baked Ziti with Summer Vegetables {new}

Saturday
English Muffins {make a double batch for the freezer}
Zucchini & Sweet Potato Frittata {new}, Waffles with Apple Topping

Snacks
Whole Wheat Applesauce Zucchini Bread {freezer}
Popcorn
Applesauce {freezer}
Granola Bars {new}
Veggie Cream Cheese Dip {new} & Whole Wheat Crackers

    Good luck on your first week back to work.
    It's another 107 degree day in Las Vegas. Man! Am I looking forward to cooler temps. Unfortunately, we don't usually start cooling down till late September or October.
