Menu Plan - February 20



Last week was intense around here.  My grandmother was in the hospital for a few days and things were crazy on campus.  The only reason I made it to Friday was because of God's strength.

The meal plan from last week was wonderful - and made sure that Frog Prince and I were eating well in the midst of a crazy, busy week.  We improvised a little towards the end of the week - taking advantage of the awesome weather to grill :)    

For Sunday brunch, we enjoyed yummy ham and mushroom omelets.

  

Monday evening, we made a delicious and simple dinner of chicken with peppers.  


Tuesday, Frog Prince made me our favorite Buttermilk Whole Wheat Pancakes for breakfast.



For dinner, we had one of our all-time favorite meals - Roasted Red Pepper Tortellini Bake.  


And, we enjoyed our beloved Dark Chocolate Raspberry Cake for dessert.  


Wednesday, was leftover night.  
We were all out of leftovers, 
so we pulled out the Italian herby rolls from the freezer and 
made toasted ham and cheese sandwiches served with steamed veggies.


Thursday, we ended up grilling!  
I was on campus longer than expected, so we tossed some Italian Sausages 
and Chicken Sausages on the grill, sauteed peppers, 
and served them on 40-minute rolls with a side of steamed veggies.  



Friday night, Frog Prince made me my birthday dinner.  
Delicious White Cheddar Mac and Cheese.



Saturday, Frog Prince got his favorite cinnamon rolls for breakfast!
We had not had these in a long time, and I'd forgotten how good they are.



Saturday night my family joined us for dinner of roasted veggie minestrone soup.


We had a get-together with dear family friends in the evening, enjoying




Texas Caviar {new}



As I type this we're getting buried in more snow.  In fact, my university has a half snow day tomorrow.  Nonetheless, we're going with easy, peasy meals this week!

Sunday
B - Cinnamon Raisin Bread, strawberries
D - Crockpot Baked Potato Bar
{To do: Prepare Baked Oatmeal, Make base of Lasagna}

Monday
B - Sweet Potato Cinnamon Baked Oatmeal {new}
D - Lasagna with Veggies, steamed broccoli

Tuesday
B - Leftover Baked Oatmeal
D - Leftover Lasagna {late night on campus}

Wednesday
B - Granola with cherries
D - Turkey (in the crockpot), pan fries, green beans
{To Do: Start broth in crockpot before bed; take bread out of freezer}

Thursday
B - Egg Sandwiches
D - Cheddar Chicken and Rice Soup {use turkey}

Friday 
B -  Cinnamon Raisin French Toast, apples
D - Unstuffed Pepper Skillet {with black beans}

Saturday
B - Apple Muffins
L - Turkey Noodle Soup
D - Homemade Pizza {with our favorite crust}
