Menu Plan–August 4

I am loving this weather – friends, it has been absolutely beautiful here.  Windows wide open, breeze coming in, sun shining down…. August is here, which means fall weather is on the way. 

Our menu plan last week didn’t go too well – we ate almost next to nothing on the day it was planned.  But, since I had all the ingredients on hand, it was easy to choose the meal for the day. 

I know some of you meal plan by deciding on a pot of recipes for the week and then you pick and choose each day.  I have to say, I enjoyed that a little bit this week. 

Our highlights were the Savory Tartlet (1st photo), Italian Pork Chops (2nd photo) and Lemon Blueberry Scones (3rd photo).

This week, I have another conference and have a dear friend from graduate school in town for the occasion!  You’ll notice there are lots of vegetarian meals this week in our menu, that’s because my friend is a vegetarian.  It should be a fun week. 

Sunday
Leftover Muffins
Baked Ziti with Summer Vegetables, Grilled Chicken
Chocolate Chip Zucchini Cake

To do: Nothing

Monday
Berry Baked Oatmeal
Lasagna-Stuffed Portobello Mushrooms {new}, spinach salad

To do: Make rice & black beans for Tuesday’s lunch

Tuesday
Granola with blueberries & yogurt
Leftovers (or Fajita Pie with Tortilla Crust)

To do: Make roasted red pepper dip

Wednesday
Oat Cakes with Fruit
Zucchini, Carrot & Black Bean Quesadillas, Herbed Green Beans

To do: Prep the veggies for breakfast & dinner

Thursday
Veggie Scramble
Vegetable Risotto

To do: Make dessert for the weekend

Friday
Blueberry Breakfast Cake
Mixed Roasted Veggies & Pasta or Garden Veggie Ricotta Pizza

To do: Prepare the crockpot egg bake, make bread dough

Saturday
Crockpot Egg Bake with Blackberry Oat Muffins
Baked Veggie Sandwiches & Sweet Potato Fries

Sunday
Cheesy Spinach Baked Egg Sandwiches, Fresh Fruit
Leftovers

Lunch Ideas sandwiches, sweet potato & black bean wraps, zucchini and carrot rice, sweet potato mac & cheese, wild rice pepper salad, pasta & zucchini, roasted veggie spread, roasted red pepper dip & crackers, Parmesan feta poppers, Roasted Vegetable Summer Salad, Spinach & Mushroom Quesadillas, black bean veggie wraps, and white bean quesadillas

Desserts – Raspberry Delight, Oatmeal Cookies, Dark Chocolate Cherry Oatmeal Cookies, Cinnamon Zucchini Cake,or  Dark Chocolate Raspberry Cake

Snacks – Texas Caviar, Popcorn, Granola Bars, or Kale Chips
